Ingredients.
For the empanadas dough
- 420g – Just About Foods Cassava Flour
- ½ tsp – salt
- 1 tsp – baking powder
- 1 tbsp – sugar
- 110g – butter
- ¼ cup – orange juice
- ⅔ cup – sparkling water
For the beef filling.
- 3 pieces – potato
- 500g – ground beef
- ⅓ cup – soy sauce
- 1 tbsp – oregano
- 1 tsp – cumin
- 1 tsp – garlic powder
- a pinch – salt
- a pinch – pepper
For the chimichurri.
- ½ cup – chopped parsley
- ½ cup – chopped chives
- 3 – garlic cloves (chopped)
- 1 piece – red chili (dry or fresh)
- 2 tbsp – chopped fresh oregano
- ½ cup – olive oil
- 2 tbsp – vinegar
- 1 tbsp – lemon juice
- as wished – salt & pepper
Instructions.
For the dough.
- Mix the dry ingredients with the butter cut in cubes, mix until well combined.
- Add the orange juice and a half a cup of sparkling water, then add the remaining little by little until a dough is formed, knead for a few minutes.
- Place in a bowl greased with a little bit of oil and leave to rest 1 hour at room temp.
- For the beef filling, peel the potatoes and cut in cubes, then boil in enough water until soft. Drain and reserve.
- In a medium saucepan with a little bit of oil, add the ground beef along with all the seasonings. Stir-fry for a minute or two then add soy sauce and water. Keep stirring until cooked. Turn off heat and add your previously boiled potatoes, mix until fully combined and reserve.
- Now, extend the dough with a rolling pin till it is very thin, making sure it doesn’t stick to the surface; then cut even discs for your empanadas.
- Now, fill each empanada and seal by pinching very well around all the seam; if you have an empanada mold, even better.
- Place in the air fryer for 30-40 minutes or until cooked and crispy.
- Serve your empanadas hot, dip in your delicious chimichurri and enjoy !
