Air-fried Colombian Empanadas

Ingredients.

For the empanadas dough

  • 420g – Just About Foods Cassava Flour
  • ½ tsp – salt
  • 1 tsp – baking powder
  • 1 tbsp – sugar
  • 110g – butter
  • ¼ cup – orange juice
  • ⅔ cup – sparkling water

For the beef filling.

  • 3 pieces – potato
  • 500g – ground beef
  • ⅓ cup – soy sauce
  • 1 tbsp – oregano
  • 1 tsp – cumin
  • 1 tsp – garlic powder
  • a pinch – salt
  • a pinch – pepper

For the chimichurri.

  • ½ cup – chopped parsley
  • ½ cup – chopped chives
  • 3 – garlic cloves (chopped)
  • 1 piece – red chili (dry or fresh)
  • 2 tbsp – chopped fresh oregano
  • ½ cup – olive oil
  • 2 tbsp – vinegar
  • 1 tbsp – lemon juice
  • as wished – salt & pepper

Instructions.

For the dough.

  1. Mix the dry ingredients with the butter cut in cubes, mix until well combined.
  2. Add the orange juice and a half a cup of sparkling water, then add the remaining little by little until a dough is formed, knead for a few minutes.
  3. Place in a bowl greased with a little bit of oil and leave to rest 1 hour at room temp.
  4. For the beef filling, peel the potatoes and cut in cubes, then boil in enough water until soft. Drain and reserve.
  5. In a medium saucepan with a little bit of oil, add the ground beef along with all the seasonings. Stir-fry for a minute or two then add soy sauce and water. Keep stirring until cooked. Turn off heat and add your previously boiled potatoes, mix until fully combined and reserve.
  6. Now, extend the dough with a rolling pin till it is very thin, making sure it doesn’t stick to the surface; then cut even discs for your empanadas.
  7. Now, fill each empanada and seal by pinching very well around all the seam; if you have an empanada mold, even better.
  8. Place in the air fryer for 30-40 minutes or until cooked and crispy.
  9. Serve your empanadas hot, dip in your delicious chimichurri and enjoy !
