Ingredients.

  • 100g – Just About Foods Almond flour
  • 100g – Just About Foods Coconut Flour
  • 2 tbsp – Just About Foods Honey Powder
  • 75g – unsalted butter (cut and cold in cube)
  • 100g – egg
  • 100g – nutella 
  • 50g – shredded dried coconut 

Instructions.

  1. Preheat the oven to 330°F and line a baking sheet with parchment paper.
  2. In a medium size bowl, place butter, honey powder and flours together and integrate using a cornet o a firm spatula until a sand like texture is formed.
  3. Add the egg and integrate with your hands just until the dough comes together and is nice and smooth. Rest the dough in the fridge for 15 min.
  4. Roll your chilled dough between two parchment paper sheets to 3 mm thick; and cut 2 inch rounds using a cookie cutter and transfer them to the prepared baking tray.
  5. Bake for about 20 minutes or until cooked and slightly browned on the bottom edges.
  6. Allow them to fully cool in the baking tray.
  7. Finally, assemble your alfajores by scooping a nice amount of nutella onto the back of one cookie, then topping it off with another cookie and pressing it gently to stick; then press onto a plate with shredded coconut around all the border that has nutella and shake of any excess.
  8. Serve and enjoy !
