Apple Crumble

Ingredients. 

  • 210g – Just About Foods All Purpose Four 
  • 1/2 tsp – Xanthan Gum 
  • 50g – old-fashioned rolled oats (gluten free) 
  • 100g – brown sugar 
  • 70g – granulated sugar 
  • 1 tbsp – ground cinnamon 
  • 1/2 tsp – nutmeg  
  • 1/4 tsp – salt 
  • 170g – unsalted butter (melted) 

For the apple filling. 

  • 6 large pieces – granny smith apples 
  • 2 tbsp – Tapioca Starch 
  • 1 tsp – ground cinnamon 
  • 75g – brown sugar 
  • 40g – raw pecans or almonds 
  • If wished – vanilla ice cream (or any of your preference) 

Instructions. 

  1. Preheat the oven to 350°F and grease a large baking dish, reserve. 
  2. Start by making the crumble topping. In a medium sized bowl, place all crumble ingredients and mix thoroughly until a dough is formed, extend to a plate and freeze for at least 20 minutes. 
  3. To make the filling, peel and cut apples into small cubes, then simply mix all ingredients, except the ice cream, in a large bowl and toss to evenly coat the apples. 
  4. Place the apple mixture into the baking dish and spread evenly; take the crumble out of the freezer and spread all over the top of the dish, making sure to break any large clumps.  
  5. Cover with foil and bake for 20 minutes; remove the foil and bake for another 35-40 minutes until golden brown and crispy. 
  6. Allow for a few minutes to cool before serving along a nice scoop of vanilla ice cream.
