Baklava Inspired Bundt Cake

Ingredients: 

For the filling 

  • 1/2 cup pistachios  
  • 1/2 cup walnuts or pecans 
  • 1/2 cup blanched almonds 
  • Zest of 1 lemon 
  • 3 tablespoons sugar 
  • 2 tablespoons melted butter 
  • 1 teaspoon ground cinnamon 
  • A pinch of ground cloves 
  • 1/4 teaspoon salt 

For the cake 

  • 1 1/2 cups Just About Foods Organic All-Purpose Gluten Free Flour 
  • 1/2 cup Just About Foods Almond Flour  
  • 1 1/2 teaspoon baking powder 
  • 1/4 teaspoon salt  
  • 3/4 cup butter, room temperature 
  • 3/4 cup sugar 
  • 5 eggs 
  • 2 teaspoons vanilla extract 

For the syrup 

  • 1/2 cup water 
  • 4 tablespoons honey 
  • 1/2 cup sugar 
  • 2 teaspoon rosewater or orange extract (optional) 

Instructions:  

Preheat the oven to 350°F. Spray a 9” Bundt cake pan with cooking spray and prepare a baking sheet with aluminum foil or parchment paper. 

Arrange all the nuts for the filling on the baking sheet and toast them for 5 to 8 minutes until slightly golden and aromatic. Remove it from the oven and let them cool.
