INGREDIENTS:
Scones
- 2 ½ cups Just About Foods Almond Flour
- ¼ cup sugar
- ¾ teaspoon baking soda
- ¼ teaspoon salt
- ½ fresh blueberries
- 2 eggs
- 1 teaspoon vanilla extract
- 1 egg of brushing
Glaze
- ½ cup icing sugar
- 1 tablespoon almond milk
- ¼ teaspoon vanilla extract
PREPARATION METHOD:
- Preheat oven to 350°F
- In a large bowl, whisk the almond flour, sugar, baking soda and salt. Make a “well” in the center of the dry ingredients and add the eggs and vanilla extract, mix with a rubber spatula until a paste is formed.
- Add the blue berries and carefully fold them into the dough.
- Line a baking sheet with parchment paper. Wet your hands and shape the dough over the baking sheet into a 1” thick disc, brush the disc with the egg and score it with a knife into 8 equal pieces.
- Bake for 25-30 minutes or until golden brown.
- Meanwhile, combine all the ingredients for the glaze and set aside.
- Once out of the oven, let them cool and cut into the 8 pieces, glaze and enjoy!
