Bluberry Scones

INGREDIENTS:

Scones 

  • 2 ½ cups Just About Foods Almond Flour 
  • ¼ cup sugar 
  • ¾ teaspoon baking soda 
  • ¼ teaspoon salt 
  • ½ fresh blueberries 
  • 2 eggs 
  • 1 teaspoon vanilla extract 
  • 1 egg of brushing 

Glaze 

  • ½ cup icing sugar 
  • 1 tablespoon almond milk 
  • ¼ teaspoon vanilla extract 

PREPARATION METHOD:

  1. Preheat oven to 350°F 
  1. In a large bowl, whisk the almond flour, sugar, baking soda and salt. Make a “well” in the center of the dry ingredients and add the eggs and vanilla extract, mix with a rubber spatula until a paste is formed. 
  1. Add the blue berries and carefully fold them into the dough. 
  1. Line a baking sheet with parchment paper. Wet your hands and shape the dough over the baking sheet into a 1” thick disc, brush the disc with the egg and score it with a knife into 8 equal pieces.  
  1. Bake for 25-30 minutes or until golden brown. 
  1. Meanwhile, combine all the ingredients for the glaze and set aside. 
  1. Once out of the oven, let them cool and cut into the 8 pieces, glaze and enjoy!
