Ingredients
For the blue corn tortilla cups
- 200 g Just About Foods Blue Corn Flour
- Water as needed
- Muffin tray
For the filling
- 1 medium piece – ripe avocado
- ½ cup – sweet corn kernels
- ¼ cup – cooked black beans (or other beans of choice) ¼ cup – red bell pepper (diced)
- ½ small piece – red onion (diced)
- ⅓ cup – chopped cilantro
- 1 piece – lime (juice AND zest)
- 1 piece – jalapeño
- ½ tsp – salt (or to taste) ground black pepper
Instructions
For the blue corn tortilla cups
- In a medium bowl, add your Just About Foods Organic Blue Corn Flour and start adding water while mixing with your clean hands until combined.
- Knead for 1-2 minutes, adding a little more water if needed, until a non-sticky and soft dough forms.
- Divide the dough into 15 portions; form balls and cover them with a damp kitchen towel to prevent from drying.
- Grease with a little butter or oil the back of your muffin tray, in the space that is in the middle of four muffin spaces (forming a square of 2×2), to get that little dented cup form.
- Make a little tortilla with your hands or use a rolling pin and some plastic sheets if you prefer, then line the back of the muffin tray, pressing a little the bass of the tortilla and molding the edges just until the form is right.
- Bake at 350ºF (180ºC) for about 30-40 min, keep a close eye. They have to be really crunchy but do no let them burn!
- Now, prepare your filling.
For the filling
- Slice and open the avocado; remove the skin and then cut into small chunks.
- Place the avocado in a large bowl along with the corn kernels, black beans, bell pepper, onion, cilantro, lemon juice and zest, jalapeño, salt and pepper to taste.
- Mix the salsa well and feel free to adjust to your taste.
- Fill your blue corn tortilla cups.
- Serve and enjoy!
