Blue Corn Tortilla Guacamole Cups

Ingredients

For the blue corn tortilla cups

  1. 200 g Just About Foods Blue Corn Flour
  2. Water as needed
  3. Muffin tray

For the filling

  1. 1 medium piece – ripe avocado
  2. ½ cup – sweet corn kernels
  3. ¼  cup – cooked black beans (or other beans of choice) ¼ cup – red bell pepper (diced)
  4. ½ small piece – red onion (diced)
  5. ⅓ cup – chopped cilantro
  6. 1 piece – lime (juice AND zest)
  7. 1 piece – jalapeño
  8. ½ tsp – salt (or to taste) ground black pepper

Instructions

For the blue corn tortilla cups

  1. In a medium bowl, add your Just About Foods Organic Blue Corn Flour and start adding water while mixing with your clean hands until combined.
  2. Knead for 1-2 minutes, adding a little more water if needed, until a non-sticky and soft dough forms.
  3. Divide the dough into 15 portions; form balls and cover them with a damp kitchen towel to prevent from drying.
  4. Grease with a little butter or oil the back of your muffin tray, in the space that is in the middle of four muffin spaces (forming a square of 2×2), to get that little dented cup form.
  5. Make a little tortilla with your hands or use a rolling pin and some plastic sheets if you prefer, then line the back of the muffin tray, pressing a little the bass of the tortilla and molding the edges just until the form is right.
  6. Bake at 350ºF (180ºC) for about 30-40 min, keep a close eye. They have to be really crunchy but do no let them burn!
  7. Now, prepare your filling.

For the filling

  1. Slice and open the avocado; remove the skin and then cut into small chunks.
  2. Place the avocado in a large bowl along with the corn kernels, black beans, bell pepper, onion, cilantro, lemon juice and zest, jalapeño, salt and pepper to taste.
  3. Mix the salsa well and feel free to adjust to your taste.
  4. Fill your blue corn tortilla cups.
  5. Serve and enjoy!
