Ingredients:
For the bread:
- 1 ¼ cups Just About Foods Banana Flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ teaspoon ground cinnamon
- 3 bananas
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 1/3 cup melted butter
- ¾ cup granulated sugar
For the caramelized banana topping:
- 1 banana, cut the banana lengthwise.
- 1 tablespoon butter
- 2 tablespoons granulated sugar
- 1 cup heavy whipping cream
- 2 tablespoons granulated sugar
- ½ teaspoon vanilla extract
Instructions:
Preheat oven to 320°F and line a 1lb loaf pan with parchment paper.
In a large bowl mash the bananas until a smooth puree, add the eggs, melted butter, vanilla extract, white vinegar, and granulated sugar, and whisk until well combined. In a separate bowl, whisk together Banana Flour, baking soda, salt, and ground cinnamon.
Add the banana puree mixture to the dry ingredients and mix until just combined.
For the caramelized banana in a skillet over medium heat, melt the butter and add the sugar, stir until melted and starts to caramelize. Add the banana cut side down and let it cook for 3 minutes or until caramelized. Gently flip the banana and let it cook for another minute.
Carefully put the caramelized bananas on the bottom of the loaf pan, cut side down, adding the rest of the caramel off the skillet. Pour the batter over the caramelized banana and give it a tap on the kitchen counter to get rid of any bubbles.
Bake for 50-55 minutes or until a toothpick inserted in the middle comes out with only a few moist crumbs. Let it cool for 10 minutes before unmolding.
Using a stand mixer or a hand mixer fitted with a whisk attachment whip the heavy cream with vanilla and sugar on medium-high speed until soft peaks are formed.
To unmold the bread, invert the pan over the serving dish and give it a good tap to loosen up. Serve warm with a good dollop of whipped cream. Enjoy!
