Carrot Cake with Cream Cheese Frosting

Ingredients

For the batter:

  • 180g – Just About Foods Gluten Free All Purpose Flour
  • 1 tsp – Just About Foods Gluten Free Xanthan Gum
  • 3g – baking powder
  • 3g – baking soda
  • 3g – ground cinnamon
  • 3g – fine salt
  • 100g – eggs (2-3 pieces)
  • 90g – brown sugar
  • 90g – plain yogurt
  • 90g – vegetable oil
  • 180g – grated carrot

For the cream cheese frosting:

  • 200g – cream cheese
  • 60g – butter
  • 120g – sifted powdered sugar
  • 3g – lemon juice

Instructions

  1. Mix and sift all the dry ingredients (flour, baking powder, baking soda, cinnamon, and salt).
  2. In a mixing bowl with a whisk attachment, combine the eggs, sugar, yogurt, and grated
    carrot; mix until you get a homogeneous mixture.
  3. Gradually add the oil in a steady stream at medium speed, and then gently fold in the
    remaining ingredients.
  4. Pour the batter into a greased and floured cake pan.
  5. Bake at 180°C (350°F) for 20-25 minutes or until a toothpick inserted into the center comes
    out clean.
  6. While the cake is cooling make the frosting.
  7. Decorate and enjoy !

To make the frosting:

  1. In a mixing bowl with a paddle attachment, cream together all the ingredients until you
    obtain a smooth texture
