Ingredients
For the batter:
- 180g – Just About Foods Gluten Free All Purpose Flour
- 1 tsp – Just About Foods Gluten Free Xanthan Gum
- 3g – baking powder
- 3g – baking soda
- 3g – ground cinnamon
- 3g – fine salt
- 100g – eggs (2-3 pieces)
- 90g – brown sugar
- 90g – plain yogurt
- 90g – vegetable oil
- 180g – grated carrot
For the cream cheese frosting:
- 200g – cream cheese
- 60g – butter
- 120g – sifted powdered sugar
- 3g – lemon juice
Instructions
- Mix and sift all the dry ingredients (flour, baking powder, baking soda, cinnamon, and salt).
- In a mixing bowl with a whisk attachment, combine the eggs, sugar, yogurt, and grated
carrot; mix until you get a homogeneous mixture. - Gradually add the oil in a steady stream at medium speed, and then gently fold in the
remaining ingredients. - Pour the batter into a greased and floured cake pan.
- Bake at 180°C (350°F) for 20-25 minutes or until a toothpick inserted into the center comes
out clean. - While the cake is cooling make the frosting.
- Decorate and enjoy !

- In a mixing bowl with a paddle attachment, cream together all the ingredients until you
obtain a smooth texture
