Cauliflower Vegetarian “Wings” 

Products: Chickpea Crumbs & All-Purpose Gluten-Free Flour Blend

Ingredients: 

For the vegan wings 

  • 3 cups orange cauliflower florets, cooked 
  • ¼ cup Just About Foods Chickpea Crumbs  
  • ½ cup of milk  
  • 1 ¼ cup Just About Foods All-Purpose Gluten Free Flour Blend 
  • 1 egg 
  • 2 teaspoons garlic powder 
  • 4 teaspoons onion powder 
  • 1 teaspoon paprika 
  • 1 tablespoon BBQ seasoning 
  • 1 teaspoon salt 
  • ¼ teaspoon pepper 
  • Enough oil for frying 

For breading 

  • 2 eggs, beaten  
  • ½ cup Just About Foods All-Purpose Gluten Free Flour Blend  
  • 1 cup Just About Foods Chickpea Crumbs 
  • Your favorite dipping sauce 

Instructions: 

In a small bowl, combine ¼ cup Chickpea Crumbs and milk, mix and let it sit until needed. 

Put the cooked cauliflower in a food processor and pulse a couple of times until roughly chopped. Using your hands, squeeze out the excess water from the cauliflower. In a large bowl, combine the squeezed cauliflower, soaked Chickpea crumbs, All-Purpose Gluten-Free Flour Blend, egg, garlic powder, onion powder, paprika, BBQ seasoning, salt, and pepper. Mix using a rubber spatula until everything is well-combined. 

Using an ice cream scoop, divide the mixture into equal portions. You should get approximately 25 portions. Wet your hands and form each portion into a wing shape, or you can form it into a disk – they will be equally delicious. Put the shaped nuggets into the freezer for 10-15 minutes. 

Cover the nuggets with All-Purpose Flour, shake off the excess, dip into the beaten eggs, then into the Chickpea Crumbs, pressing lightly so that they adhere. 

Heat enough oil over medium heat to 350°F and fry the vegetarian wings until golden brown. Drain them on a cooling rack to remove excess oil. 

Serve immediately with your favorite dipping sauce and enjoy!
