Cheese Fatayer with Mozzarella Stuffed Crust

Ingredients

For the sponge:
65 g – Just About Foods Organic Gluten Free All Purpose Flour
½ tbsp – instant yeast
½ cup – lukewarm water
1 tbsp – sugar


For the dough:
180 g – Just About Foods Gluten Free All Purpose Flour
36 g – olive oil
1 tsp – salt


For the cheese f illing:
1 ½ cups – freshly grated mozzarella cheese
1 cup – crumbled feta cheese
handful – freshly chopped parsley
¼ tsp – garlic powder
¼ tsp – onion powder
¼ tsp – black pepper


For the crust :
handful – freshly grated mozzarella cheese
*Extra – milk or heavy cream for brushing

Instructions

Prepare the sponge:

  1. In a large bowl, mix together your Just About Foods Organic Gluten All Purpose Free Flour,
    sugar, yeast and warm water. Cover with a damp paper towel and let it sit for 10 min.


Prepare the dough:

  1. After letting the sponge rest, add in the rest of the flour, salt and olive oil; roughly combine
    with a wooden spoon.
  2. With lightly oiled hands and on a clean and oiled surface, knead the dough for about 10 min
    until smooth. (do not add any extra flour, at first it is quite sticky, but it’ll come together
    nicely after kneading)
  3. Separate the dough into 5 balls, cover with a damp towel and allow to rest for another 10
    minutes.
  4. Lightly sprinkle flour on your work surface and roll out each dough ball about half an inch
    thick.
  5. To make the crust, add a light amount of grated mozzarella to the edges; then start folding
    the dough over the cheese, pressing down to seal the edges.
  6. Fold the edges of your crust into a diamond or football shape, pinching top and bottom to
    enforce the shape even more.
  7. Now, preheat your oven to 425°f (218°C).
  8. Transfer the shaped fatayers to a lined baking sheet and brush either milk or heavy cream
    on your crust.
  9. Fill generously with your cheese mixture.
  10. Bake for 25-30 min. Keep a close eye on them until you get a beautiful golden crust.
  11. Remove and allow your Cheese Fatayer to cool for a few minutes
  12. Serve and enjoy!
