Chicken and Waffles

Ingredients: 

For brine 

  • 8 chicken tenders 
  • 1 cup buttermilk 
  • 1 teaspoon hot sauce 
  • ½ teaspoon paprika 
  • ¼ teaspoon salt 
  • ½ teaspoon onion powder 
  • ½ teaspoon garlic powder 

For the breading flour 

  • 1 cup Just About Foods All-Purpose Gluten-Free Flour Blend 
  • ¼ cup Just About Foods Cornstarch  
  • ½ teaspoon baking powder 
  • 1 teaspoon onion powder 
  • 1 teaspoon garlic powder 
  • ½ teaspoon salt 
  • Enough vegetable oil for frying 

For the waffles  

  • 1 ½ cup Just About Foods Gluten-Free Pancake & Waffle Flour Blend 
  • ½ cup milk 
  • 2 eggs 
  • 4 tablespoons melted butter 
  • Cooking spray  

Instructions: 

For the brine, in a Ziploc bag, combine buttermilk, hot sauce, paprika, salt, onion powder, and garlic powder, shake the bag to combine all the ingredients; add the chicken tenders zip the bag and marinate for at least 1 hour to overnight.  

For the waffles, whisk together all the ingredients until well combined. Preheat the waffle iron according to the manufacturer’s instructions and spray it with cooking spray, add a half cup of the batter and cook until golden brown. Repeat with the rest of the batter; you should get approximately 8 waffles.  

When you are ready to make the chicken tenders, make the breading flour mixture by whisking together All-Purpose Gluten-Free Flour, Cornstarch, baking powder, onion powder, garlic powder, and salt. Take each chicken tender from the brine and thoroughly cover the chicken with the flour mixture, then let it rest for a few minutes while the oil is heating.  

On a heavy-bottomed pot over medium-high heat, bring the oil to 350°F. Fry the chicken tenders in batches until golden brown and the internal temperature of the chicken is 165°F. Let the chicken drain over a kitchen rack to remove excess oil.  

Serve the chicken on top of the waffles and drizzle with hot sauce and maple syrup. Enjoy!
