Ingredients.
- 2 ½ cups – Just About Foods Cassava Flour
- 1 cup – granulated sugar
- ½ cup – shortening
- ½ cup – butter (softened)
- 1 piece – egg
- 2 tsp – vanilla extract
- ½ tsp – baking powder
- ¼ tsp – salt
For the glaze
- 2 tbsp – milk
- 1 cup – powdered sugar
Instructions.
- In a large bowl, beat sugar, shortening and butter until creamy.
- Add in vanilla and egg, beat for another minute. Stir in Cassava Flour, baking powder and salt until well combined.
- Divide dough in half, wrap in plastic film and refrigerate for an hour.
- Preheat the oven 15 minutes before taking the dough to roll.
- Roll each half dough to ¼ in thick and cut with christmas cutters.
- Place all cookies onto the lined baking sheets.
- Bake for 15 minutes or until edges are lightly browned.
- Let the cookies cool for 30 minutes at least before decorating.
- To make the glaze simply mix both ingredients until a thick paste is formed, transfer to a piping bag with a round small tip.
- Decorate as wished and enjoy !
