Christmas Sugar Cookies

Ingredients.

  • 2 ½ cups – Just About Foods Cassava Flour
  • 1 cup – granulated sugar
  • ½ cup – shortening
  • ½ cup – butter (softened)
  • 1 piece – egg
  • 2 tsp – vanilla extract
  • ½ tsp – baking powder
  • ¼ tsp – salt

For the glaze

  • 2 tbsp – milk
  • 1 cup – powdered sugar

Instructions.

  1. In a large bowl, beat sugar, shortening and butter until creamy. 
  2. Add in vanilla and egg, beat for another minute. Stir in Cassava Flour, baking powder and salt until well combined.
  3. Divide dough in half, wrap in plastic film and refrigerate for an hour.
  4. Preheat the oven 15 minutes before taking the dough to roll.
  5. Roll each half dough to ¼ in thick and cut with christmas cutters. 
  6. Place all cookies onto the lined baking sheets.
  7. Bake for 15 minutes or until edges are lightly browned.
  8. Let the cookies cool for 30 minutes at least before decorating.
  9. To make the glaze simply mix both ingredients until a thick paste is formed, transfer to a piping bag with a round small tip.
  10. Decorate as wished and enjoy !
