Cinnamon Roll Bites

Ingredients.

  • 140g – Just About Foods Cassava Flour
  • ½ tsp – Just About Foods Xanthan Gum
  • 250g25 – greek yogurt (sweetened)
  • 30g – unsalted butter (room temperature)
  • 3 tbsp – sugar 
  • 1 tsp – cinnamon
  • 6 tbsp – powdered sugar
  • 4 tsp – milk

Instructions.

  1. In a medium bowl, mix Cassava Flour, Xanthan Gum and greek yogurt with your hands until a smooth dough is formed.
  2. Sprinkle a little Cassava Flour onto the surface and on your rolling pin and roll your dough about 3 mm thick.
  3. In a small bowl mix butter, sugar and cinnamon until a paste is formed. Then spread all over your extended dough.
  4. Cut thin slices all along and roll them to form the mini cinnamon rolls.
  5. Place on a lined baking sheet and bake at 200°C for about 25-35 minutes, depending on your oven.
  6. For the glaze, simply mix powdered sugar and milk in a bowl.
  7. Glaze your cinnamon roll bites while warm.
  8. Serve and enjoy !
