Ingredients.
- 140g – Just About Foods Cassava Flour
- ½ tsp – Just About Foods Xanthan Gum
- 250g25 – greek yogurt (sweetened)
- 30g – unsalted butter (room temperature)
- 3 tbsp – sugar
- 1 tsp – cinnamon
- 6 tbsp – powdered sugar
- 4 tsp – milk
Instructions.
- In a medium bowl, mix Cassava Flour, Xanthan Gum and greek yogurt with your hands until a smooth dough is formed.
- Sprinkle a little Cassava Flour onto the surface and on your rolling pin and roll your dough about 3 mm thick.
- In a small bowl mix butter, sugar and cinnamon until a paste is formed. Then spread all over your extended dough.
- Cut thin slices all along and roll them to form the mini cinnamon rolls.
- Place on a lined baking sheet and bake at 200°C for about 25-35 minutes, depending on your oven.
- For the glaze, simply mix powdered sugar and milk in a bowl.
- Glaze your cinnamon roll bites while warm.
