- ½ lb large prawns, peeled and deveined

- 1 cup Just About Foods Cassava Flour
- 2 eggs
- ¼ cup water
- 2 cups Just About Foods Coconut Crumbs
- Enough oil for frying
- Your favorite dipping sauce
- Cilantro for garnish
For the batter, combine ½ cup Cassava Flour, eggs and water until a runny batter is formed.
To prepare the breading station, put the rest of the Cassava Flour and paprika in a shallow bowl and whisk to combine. In another bowl, place the Coconut Crumbs.
Season the prawns with salt and pepper to taste on both sides.
Cover the prawns in the flour mixture, dip them into the batter, and, finally, coat them with the Coconut Crumbs, pressing them to ensure they stick perfectly to the prawn.
Preheat the oil over medium heat to 350-355°F and fry the prawns until golden and crispy, approximately 3-5 minutes. Let the prawns drain over a cooking rack.
Serve with your favorite dipping sauce and cilantro. Enjoy!
