Coconut Shrimp with Spicy Mango Sauce

Ingredients.

  • 2 ½ cups – Just About Foods Coconut Crumbs
  • 3 pieces – egg
  • as wished – salt, pepper, spices
  • 600g – shrimp
  • 2 cups – oil for frying

for the dipping sauce.

  • 3 pieces – mango (ripe)
  • 1 piece – habanero chili (or güero)
  • ¼ cup – vinegar
  • as needed – salt and pepper

Instructions.

Start by preparing the sauce. Blend together all ingredients then transfer to a boiling pot at medium heat and reduce and stir constantly till the sauce thickens, remove from heat and place in a dipping dish. Allow to cool while making the coconut shrimp.

Now, place your Coconut Crumbs in a shallow dish, along with the salt, pepper and preferred spices, to toss the shrimp in, do the same with the eggs (whisked) as well; pour the oil in a deep frying pot and reserve.

Place a shrimp into the egg bowl, then transfer to the coconut crumb bowl and toss completely; if you wish an extra crunch, dip again in the egg and crumb bowls.  Reserve on a plate and repeat with remaining shrimp.

Heat to medium-high your pot with oil and fry the shrimp till golden brown, it should be relatively quick. Drain the excess oil with paper towels.

Serve immediately along with the spicy mango sauce. Enjoy!
