Ingredients.
- 2 ½ cups – Just About Foods All Purpose Flour
- 1 ½ tsp – Just About Foods Xanthan Gum
- ½ tsp – salt
- ¼ tsp – cream of tartar
- ¼ tsp – baking soda
- ¼ cup – brown sugar
- 2 ½ tsp – instant yeast
- 1 tsp – vanilla extract
- 1 tsp – apple cider vinegar
- 180ml – warm milk
- 4 tbsp – melted butter
- 1 piece – egg
- 1 piece – egg white
- enough oil for frying
for the glaze.
- 1 cup – confectioner’s sugar
- 4-6 tbsp – Just About Foods Coconut Syrup
- fried and chopped bacon – for garnishing
Instructions.
- In a small bowl rehydrate the instant yeast with the warm milk and a pinch of sugar, slightly mix and set aside for 10 minutes or until foamy.
- In a large bowl, whisk together the rest of the sugar, flour, xanthan gum, salt, cream of tartar, baking soda and spices.
- Add in the hydrated yeast, apple cider, egg white, egg and melted butter; mix until a dough is formed. Cover the bowl with plastic film and let it proof for 30 minutes or until doubled in size.
- On a deep pot put approximately 3 inches of oil and let it heat over medium heat. Meanwhile, on a slightly floured surface knead the proofed dough to release the air and then roll it out to 1 cm thick and cut circles removing the center to create donut shaped rings.
- Fry each donut in the previously heated oil until both sides are golden brown, about 2 minutes per side.
- Transfer the fried donuts to a rack over kitchen paper and let them cool.
- In a small bowl, mix all the ingredients for the glaze and cover the donuts in glaze, garnish with crispy bacon crumbs and enjoy!
