Ingredients.
- ½ cup – Just About Foods Almond Flour
- 1 cup – JAF All Purpose Flour
- 1 tsp – baking powder
- 1 pinch – salt
- ¼ cup – cocoa powder
- 3 tbsp – instant coffee
- ½ cup – sliced almonds
- 125g – unsalted butter (room temp)
- 1 cup – caster sugar
- ½ cup – milk
- 2 pieces – egg
For the toppings.
- 50g – semisweet chocolate (melted)
- 10 – sliced almonds
Instructions.
- Preheat the oven to 320°F and line a muffin tin with 12 paper cups.
- In a medium bowl, cream together butter and sugar, then add the eggs and mix until light and fluffy.
- Add in the milk, both flours, salt, baking powder, cocoa powder, instant coffee and mix until combined. Finally add in the sliced almonds and mix just until combined.
- Divide the mixture evenly to the muffin molds and bake for about 18-20 minutes or until a toothpick is inserted in the center and comes out clean. Remove from the oven and transfer to a rack. Cool completely before decorating.
