Coffee and Almond Cupcakes

Ingredients.

  • ½ cup – Just About Foods Almond Flour
  • 1 cup – JAF All Purpose Flour
  • 1 tsp – baking powder
  • 1 pinch – salt
  • ¼ cup – cocoa powder
  • 3 tbsp – instant coffee
  • ½ cup – sliced almonds
  • 125g – unsalted butter (room temp)
  • 1 cup – caster sugar
  • ½ cup – milk
  • 2 pieces – egg

For the toppings.

  • 50g – semisweet chocolate (melted)
  • 10 – sliced almonds

Instructions.

  1. Preheat the oven to 320°F and line a muffin tin with 12 paper cups.
  2. In a medium bowl, cream together butter and sugar, then add the eggs and mix until light and fluffy.
  3. Add in the milk, both flours, salt, baking powder, cocoa powder, instant coffee and mix until combined. Finally add in the sliced almonds and mix just until combined.
  4. Divide the mixture evenly to the muffin molds and bake for about 18-20 minutes or until a toothpick is inserted in the center and comes out clean. Remove from the oven and transfer to a rack. Cool completely before decorating.
