Chocolate & Blueberries Gluten Free Bundt Cake

Ingredients

For the cake batter

  1. 3 pieces – egg
  2. 150 g (¾ cup) – sugar
  3. 120 g (1 ½ cup) – Just About Foods All Purpose Flour
  4. (1 cup) – cocoa powder
  5. 236 g (1 cup) – water
  6. 1 tbsp – vegetable oil
  7. 1 tbsp – baking powder
  8. 1 pinch – salt

For the ganache

  1. 120 g – heavy cream
  2. 120 g – dark chocolate
  3. 100 g – blueberries (for topping)
  4. *Extra – sliced almonds to sprinkle

Instructions

  1. Preheat your oven to 350ºF (180ºC).
  2. Separate the eggs and beat the whites until peaks are formed; reserve shortly.
  3. Beat sugar and yolks at high speed.
  4. Turn the speed to low and add in your Just About Foods Organic All Purpose Flour and cocoa, mix just until combined.
  5. Slowly add in the water and oil until combined.
  6. Softly incorporate the beaten egg whites, baking powder, and salt.
  7. Bake for about 20-25 minutes (keep a close eye, though) in a previously greased and floured bundt mold.
  8. Let it cool before taking it out of the mold.
  9. Now, for the ganache, heat your cream and pour it over your chopped chocolate.
  10. Emulsify using a whisk, until the chocolate has melted and you get a silky ganache.
  11. Pour over your cooled cake, top with blueberries, serve and enjoy!
