Ingredients
- 1 cup Just About Foods Cassava Flour
- 1 cup Just About Foods Tapioca Flour
- 2 tablespoons baking soda
- ½ teaspoon salt
- 1 tablespoon brown sugar
- 4 eggs
- 1/4 cup shortening
- 1-5 tablespoons water
- 4 tablespoons maple syrup
- 4 tablespoons everything seed mix
Instructions:
In a medium bowl, combine the Cassava Flour and Tapioca Flour.
In the bowl of the stand mixer, add the flour mixture, baking soda, salt, sugar and mix with the paddle attachment.
Add the shortening and mix until it resembles wet sand. Add eggs and mix. The mixture will look crumbly. Then, add water tablespoon by tablespoon, until a dough is formed.
Preheat oven to 350°F and line a baking sheet with parchment paper.
In a saucepan, boil 4 cups of water. In the meantime, dive the dough into 4 portions and form the bagel shapes. Add the baking soda and maple syrup into the boiling water and boil each bagel for 1 minute or until they rise to the top of the water.
Place the bagels in the lined baking sheet and sprinkle generously with the everything seed mix.
Bake for 25-30 minutes or until golden brown.
