Ingredients:
- 2 cups Just About Foods Chickpea Flour
- 2 teaspoons baking powder
- 1 tablespoon light brown sugar
- ½ teaspoon Just About Foods Xanthan Gum
- ¼ teaspoon salt
- 5 tablespoons cold butter, cubed
- ¾ -1 cup cold milk
Instructions:
Preheat oven to 425°F. Line a baking sheet with parchment paper.
In a medium bowl, whisk the chickpea flour, baking powder, salt, sugar, and xanthan gum. Add the cold butter and work it with a pastry cutter until the mixture resembles wet sand. Add milk little by little, incorporating it into the mixture with a rubber spatula until a crumbly dough is formed. Then, shape the dough into a ball and wrap it in plastic film. Let it set in the fridge for 30 minutes.
Take the dough from the fridge and roll it out to 1” thick, fold it in half, turn it and roll it out again.
Repeat this process twice, wrap the dough in plastic film and let it set in the fridge for another 14 minutes. Finally, roll out the dough to 1 ½” thick and using a cookie cutter, cut the biscuits.
Put the biscuits on the baking sheet and brush them with milk, making sure the milk doesn’t drip over the edges. This could cause the layers to stick.
Bake 15-18 minutes or until golden brown on the bottom.
