Ingredients:
- 1 tablespoon instant dry yeast
- ¼ cup warm water
- 3 teaspoons granulated sugar
- 1 ½ cups Just About Foods All-Purpose Gluten Free Flour Blend, plus more for dusting
- 1/8 teaspoon salt
- 1/3 cup evaporated milk
- 1 egg
- 2 tablespoons melted butter
- ¾ cup icing sugar
- Enough oil for frying
Instructions:
In a small bowl, dissolve the yeast and 1 teaspoon of sugar in warm water and set it aside until foamy.
In the bowl of the stand mixer, using the paddle attachment, combine the All-Purpose Flour, remaining sugar, and salt. Pour in the yeast mixture and egg and mix until incorporated. Add the melted butter and mix until a smooth and soft dough is formed.
Cover the bowl with plastic wrap and let it prove in a warm place for 20 to 30 minutes.
Dust a clean surface with flour and roll out the dough to a thickness of ¾”. Cut the dough into 2.5×3″ rectangles. The dough should be soft, so be careful when handling it.
Heat oil in a Dutch oven over medium heat to 350°F and fry the beignets in batches of 3 until they are golden brown on both sides. Let the excess oil drain on paper towels.
Dust the beignets with icing sugar and serve them warm. Enjoy!
