Gluten-Free Marbled Sugar Cookies

Ingredients: 

  • 1 cup butter, room temperature 
  • 1 cup granulated sugar 
  • 2 ½ cups Just About Foods Cassava Flour, plus more for dusting.  
  • 4 teaspoons Just About Foods Tapioca Flour  
  • ¼ teaspoon baking powder 
  • 1/8 teaspoon salt 
  • 1 teaspoon vanilla extract 
  • 1 egg 
  • Red food coloring 
  • ½ cup your favorite jam 

Instructions: 

Whisk together Cassava Flour, Tapioca Flour, baking soda, and salt in a small bowl, and set it aside until needed. 

In the bowl of the stand mixer beat the butter until soft, then, add the granulated sugar and mix until well combined. Add the vanilla extract and egg and mix until smooth. 

Add the Cassava Flour mixture and beat until the dough is formed. Wrap the dough with plastic wrap and let it chill in the fridge for at least 15 minutes.  

Preheat oven to 375°F and line a cookie sheet with parchment paper.  

Divide the dough into thirds and add three drops of red food coloring to one of the thirds and knead until you get a homogeneous color. Knead the colored dough for a few seconds into the plain dough to create the marble effect.  

On a well-floured surface, roll out the marbled dough to ¼” thickness, cut an even number of cookies and transfer to the lined cookie sheet. Repeat for the rest of the dough.  

Bake for 10-15 minutes or until slightly golden brown on the bottom of the cookies. Take the cookies out of the oven and let them cool on the cookie sheet to room temperature.  

Add ½ teaspoon of jam on the bottom of one cookie and sandwich it with another cookie, with the bottom part touching in the inside. Repeat for the rest of the cookies.
