Gluten-Free Pita Bread

Products: Gluten-Free All-Purpose Baking Flour & Xanthan Gum

Ingredients: 

  •  2 cups Gluten-Free All-Purpose Baking Flour 
  • 1 teaspoon Xanthan Gum  
  • 1 ½ Baking Powder  
  • ½ Salt 
  • 1 tablespoon vegetable oil 
  • 1 egg 
  • 1 egg white 
  • ¾ cup milk  

Instructions: 

Preheat your oven with a pizza stone to 400°C, if you don’t have a pizza stone, use a baking tray upside down.  

In the stand mixer bowl fitted with the paddle attachment, place All-Purpose Flour, Xanthan Gum, baking powder, and salt, and give a mix on low to combine.  

Add the egg, egg white, oil, and ½ cup of milk, and mix on low until starts to clump into a dough. Add the rest of the milk little by little while mixing until a smooth dough is formed. You might not use all the milk.  

Turn the dough into a clean surface, form a cylinder, and divide it into 4 equal pieces. Using a rolling pin, roll each piece into a circle of approximately ½” in thickness; Place each disk into a piece of parchment paper. 

Carefully put one of the disks on top of the heated pizza stone and allow it to bake for 5 minutes. Open the oven door and using a spatula, turn the pita and allow it to bake on the other side for 5 minutes; take the pita from the oven and repeat with the rest of the pitas.  

Serve warm with your favorite dipping sauce or filling. Enjoy!
