Healthy Pumpkin Pie

Ingredients.

For the pie crust.

  • 1 ½ cups – Just About Foods Oat Flour
  • ½ cup – Just About Foods Almond Flour
  • ¼ cup – coconut oil
  • 7 pieces – pitted dates
  • ½ tsp – pumpkin spice

For the pumpkin pie filling.

  • 1 can – pumpkin puree
  • 1 ½ cups – milk (any choice of yours)
  • 1 tsp – pumpkin spice
  • 1 tsp – vanilla essence
  • ¼ cup – brown sugar
  • 7g – powdered gelatin 
  • 35g – water

*Extra – whip topping for decoration

Instructions.

  1. In a small bowl, hidrate gelatin in 35g of water, reserve.
  2. In another small bowl, hidrate pitted dates with hot water for about 15-20 minutes, then drain. Reserve.
  3. In a food processor, mix all the ingredients for the pie crust until combined. 
  4. Line the entire pie ring with your paste and press to make a firm base.
  5. Now, for the pumpkin filling, mix together pumpkin puree, milk, pumpkin spice, vanilla, sugar and the previously hydrated gelatin.
  6. Place in the freezer for 3-4 hours or until firm and steady.
  7. Decorate with whipped cream along the edge.
  8. ¡ Serve and enjoy !
