Ingredients.
For the pie crust.
- 1 ½ cups – Just About Foods Oat Flour
- ½ cup – Just About Foods Almond Flour
- ¼ cup – coconut oil
- 7 pieces – pitted dates
- ½ tsp – pumpkin spice
For the pumpkin pie filling.
- 1 can – pumpkin puree
- 1 ½ cups – milk (any choice of yours)
- 1 tsp – pumpkin spice
- 1 tsp – vanilla essence
- ¼ cup – brown sugar
- 7g – powdered gelatin
- 35g – water
*Extra – whip topping for decoration
Instructions.
- In a small bowl, hidrate gelatin in 35g of water, reserve.
- In another small bowl, hidrate pitted dates with hot water for about 15-20 minutes, then drain. Reserve.
- In a food processor, mix all the ingredients for the pie crust until combined.
- Line the entire pie ring with your paste and press to make a firm base.
- Now, for the pumpkin filling, mix together pumpkin puree, milk, pumpkin spice, vanilla, sugar and the previously hydrated gelatin.
- Place in the freezer for 3-4 hours or until firm and steady.
- Decorate with whipped cream along the edge.
