Homemade Egg Rolls

Ingredients

For the wrappers:

  • 240g – Just About Foods Gluten Free Cassava Flour (+ extra for dusting)
  • 1 large egg
  • ¾ cup – ice cold water (+ an additional ¼ cup if needed)
  • 1 tsp – salt
  • 20g – Just About Foods Gluten Free Tapioca Flour (starch) (to prevent sticking)

For the filling:

  • 150g – ground pork
  • 100g – cooked rice vermicelli noodles
  • 50 g – grated carrot
  • 75 g – chopped cabbage
  • 50g – sliced mushrooms
  • 1 clove – garlic
  • 1 piece – eggs
  • 20 gr – chopped scallions
  • 1 tbsp – sesame oil
  • 3 tbsp – soy sauce
  • as needed – salt

Instructions

  1. In a bowl mix the flour, 1/4 cup cold water, the egg, and salt .
  2. Add up to 1/4 cup more of cold water if needed to make a sticky dough.
  3. Place the dough on a lightly floured surface and knead for until smooth and elastic
    (5-7 min).
  4. Let the dough rest for 30 minutes, then knead it a little bit more.
  5. Cut the dough in half and wrap the other half in plastic film.
  6. Place one half on a lightly floured surface and roll out very thin (3 mm or ⅛ in). Cut out
    squares measuring 5 inches.
  7. Stack the egg roll sheets by dusting thoroughly with tapioca starch between them to prevent
    sticking.
  8. For the filling, simply add all the ingredients to a bowl and mix to form a kind of paste
    (remember that the noodles are previously cooked).
  9. Portion and add the mixture to each wrapper square, roll, seal with a slightly thick mix of
    water & flour and deep fry them for about 5-7 min or until golden brown and crispy.
  10. Dip in your favorite sauce. Enjoy!
