- 1 cup Just About Foods Chickpea Flour
- 1 ½ cup water
- 1/3 cup Tahini
- Juice of 1 ½ lemon
- 3 garlic cloves
- ½ teaspoon ground cumin
- ¼ cup olive oil
- Extra olive oil for serving
Whisk together chickpea flour and water in a medium pot. Bring to a boil over medium heat and continue to whisk; once boiling, reduce heat to low, and allow to simmer until thickened, about 5 minutes whisking constantly. Remove from heat and allow to cool.
In a food processor, combine Tahini, lemon juice, garlic cloves, cumin, and olive oil until smooth. Add the chickpea paste and process until well combined; if the mixture is too thick, add water a little at a time until it reaches the desired texture. Add salt to taste and process one more time.
Pour the hummus on a serving plate with a sprinkle of paprika and a good drizzle of olive oil and serve with your favorite toppings. Enjoy!
