Keto Three Kings Bread

Ingredients: 

For the bread 

  • 10g instant dry yeast 
  • 200ml warm water 
  • 1 teaspoon sugar 
  • 175g Just About Foods Coconut Flour 
  • 175g Just About Foods Almond Flour 
  • 60g psyllium husk  
  • 3g salt 
  • 80g erythritol or 40g sucralose  
  • 3 egg whites 
  • 2 eggs 
  • 75g butter, room temperature 
  • 250ml almond milk, unsweetened  
  • Freshly grated orange zest from one orange 
  • 200ml orange blossom tea 

For the toppings 

  • ½ cup chopped nuts (we used pecans) 
  • 34g sugar free chocolate, melted 
  • 70g Just About Foods Coconut Flour 
  • 110g butter, room temperature 
  • 70g erythritol 
  • 2 tablespoons unsweetened almond milk 
  • Extra erythritol for sprinkling  
  • 1 egg, beaten  

Instructions: 

Dissolve instant dry yeast and sugar in hot water and set aside until foamy. 

In a jar, combine orange blossom tea, egg whites, eggs, and almond milk.  

In the mixing bowl, combine coconut flour, almond flour, psyllium husk, erythritol, salt, and orange zest, and whisk to combine. Add almond milk into the mixture and mix until the dough is formed. Knead in the butter until you get a soft dough. Cover with plastic wrap and let it rise for 15-20 minutes.  

For the sugar paste, combine coconut flour, butter, erythritol, and almond milk until a paste like a cookie dough is formed. 

Preheat oven to 355°F. 

Turn the dough into a clean surface and shape it into a large oval ring. Carefully, transfer the ring to a baking tray. Divide the sugar paste into 6 equal pieces, slightly press them into an oval and place them in the bread; brush the bread with beaten egg and sprinkle the chopped nuts on the sides without cookie dough. Sprinkle erythritol over the cookie dough. 

Bake for 40-50 minutes or until golden brown.  

Let the bread cool down and drizzle the melted chocolate over the chopped nuts.  

Serve warm and enjoy!
