 Lemon pound cake

Ingredients.

  • 160g – Just About Foods All Purpose Flour
  • ¼ tsp – JAF Xanthan Gum
  • 30g – JAF Tapioca Starch
  • 1 tsp – salt
  • 200g – granulated sugar
  • 1 piece – lemon zest
  • 3 tbsp – lemon juice
  • 170g – unsalted butter (room temp)
  • 120g – cream cheese (room temp)
  • 4 pieces – egg

For the glaze.

  • 1 cup – confectioner’s sugar
  • 2 tbsp – lemon juice
  • a pinch – salt

Instructions.

  1. Preheat the oven to 325° and grease a cake mold or a loaf tin. Reserve.
  2. Place butter and cream cheese in a large mixing bowl and cream until light and fluffy. 
  3. Add the sugar and mix until very well combined. Then add in the eggs, one by one, and the lemon juice. 
  4. Add the flour in three parts, along with the xanthan gum, tapioca starch, lemon zest and salt. Mix just until combined.
  5. Pour the mixture onto the greased mold and bake for about 45-50 minutes; depending on your oven. 
  6. Let it cool for about 20 minutes before removing from mold, then let it fully cool before drizzling the glaze.
  7. To make the glaze, simply mix all ingredients until a slightly thick paste is formed.
  8. Decorate with some lemon slices, serve and enjoy!
