Ingredients.
- 160g – Just About Foods All Purpose Flour
- ¼ tsp – JAF Xanthan Gum
- 30g – JAF Tapioca Starch
- 1 tsp – salt
- 200g – granulated sugar
- 1 piece – lemon zest
- 3 tbsp – lemon juice
- 170g – unsalted butter (room temp)
- 120g – cream cheese (room temp)
- 4 pieces – egg
For the glaze.
- 1 cup – confectioner’s sugar
- 2 tbsp – lemon juice
- a pinch – salt
Instructions.
- Preheat the oven to 325° and grease a cake mold or a loaf tin. Reserve.
- Place butter and cream cheese in a large mixing bowl and cream until light and fluffy.
- Add the sugar and mix until very well combined. Then add in the eggs, one by one, and the lemon juice.
- Add the flour in three parts, along with the xanthan gum, tapioca starch, lemon zest and salt. Mix just until combined.
- Pour the mixture onto the greased mold and bake for about 45-50 minutes; depending on your oven.
- Let it cool for about 20 minutes before removing from mold, then let it fully cool before drizzling the glaze.
- To make the glaze, simply mix all ingredients until a slightly thick paste is formed.
- Decorate with some lemon slices, serve and enjoy!
