Mango & Matcha Clusters

Ingredients.

  • 2 tbsp – Just About Foods Coconut Syrup
  • 2 pieces – mango
  • 1 cup – plain greek yogurt
  • 1 tsp – vanilla extract
  • 150g – white chocolate
  • 1 tbsp – coconut oil
  • 1 tbsp – matcha powder
  • as wished – coconut flakes
  • as wished – flaky sea salt

Instructions.

  1. In a medium bowl, mix together yogurt, Coconut Syrup and vanilla.
  2. Chop the mangoes and fold them into the yogurt mixture.
  3. Scoop 10 equal dollops onto a baking tray lined with parchment paper and freeze for at least 3 hours.
  4. Melt chocolate with coconut oil in 20 seconds microwave intervals; then sift in the matcha powder, mix until combined.
  5. Coat your frozen clusters in the chocolate and place back in the lined baking tray, and quickly sprinkle with coconut flakes and sea salt. 
  6. Freeze for another 10-15 minutes. Serve and enjoy!
