- 1 cup Just About Foods Sunflower Seeds Flour
- ¼ cup Just About Foods Coconut Flour
- ¾ teaspoon baking soda
- ¼ teaspoon sea salt
- 1 tablespoon matcha powder
- ¼ cup butter, room temperature
- ½ cup brown sugar
- 1 teaspoon vanilla extract
- 1 egg
- ½ cup white chocolate chips
- Extra white chocolate chips
Preheat oven to 350°F. Line a cookie sheet with parchment paper.
In a medium bowl, whisk the sunflower seeds Flour, coconut flour, baking soda, sea salt and matcha powder.
In a stand mixer with the paddle attachment, beat the butter until creamy. First, add the brown sugar and mix it until well combined. Then, add the egg and vanilla and mix until no lumps are left. Finally, incorporate the flour mixture.
Add white chocolate chips to the cookie dough using a rubber spatula. Divide the dough into 10 portions, and with your hands wet, roll them into balls. Press them slightly over the cookie sheet leaving them 2” apart. Add the extra white chocolate chips on top.
Bake for 10-15 minutes or until the bottoms are golden brown. Carefully transfer them to a cooling rack. Let the cookies cool completely and enjoy!
