For the cookie
- ½ cup Just About Foods Organic Coconut Flour
- 1 tbsp Just About Foods Tapioca Flour
- ½ tsp baking soda
- 1/8 tsp salt
- ¼ cup butter, room temperature
- ½ cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
For the decorations
- 1 cup powdered sugar
- 2 tsp milk of your choice
- ¼ tsp cocoa powder
- Orange food coloring
- 9 white marshmallows
- 18 candy coated chocolate buttons
Preheat oven to 350°F and prepare a cooking tray with parchment paper.
In a separate small bowl, combine the Coconut flour, Tapioca Flour, baking soda and salt.
In a stand mixer with the paddle attachment, beat the butter until creamy. Stop the mixer and add the granulated sugar and turn the mixer on low. When creamy, add the egg, vanilla extract and beat until homogeneous. Add the Coconut Flour mixture and mix until the dough is formed.
Using a rolling pin, roll out the dough to approximately ¼” thick.
Using a small knife, cut irregular shapes to mimic the snowman melting, making 9 cookies. Place the cookies in the cookie tray and bake for 10 minutes or until the edges are slightly golden. Take out the cookies and let them cool completely.
For the icing, mix the icing sugar with the milk of your choice. For the eyes, smile and stick arms, combine the cocoa powder with 2 tbsp of the plain icing. For the nose, take 1 tbsp of icing and combine it with the orange color.
Using a toothpick, make the snowman face in the marshmallows, let it set before handling.
To make the melted snowman, put a good drizzle of plain icing on the cookie and spread it using the back of a spoon, put the marshmallow face, the chocolate buttons and using a toothpick and the cocoa icing, draw irregular lines for the stick arms. Repeat for the rest of the cookies.
Sprinkle icing sugar to mimic snow if desired. Let them cool and enjoy!
