Mini Banana-Stuffed Pancakes.

  • 1 ½ cups Just About Foods Gluten-Free Pancakes & Waffles Flour Blend 
  • ½ cup milk 
  • 2 eggs 
  • 4 tablespoons melted butter.  
  • 4 bananas  
  • 6oz blueberries  
  • Maple syrup  


In a medium bowl combine the Gluten-Free Pancake flour blend, milk, eggs melted butter, and whisk until well combined. Cut the bananas into ¾” slices. 

Add the banana slices to the batter and gently fold the mixture to fully cover the slices. Be careful not to break them.  

Heat a non-stick pan to medium heat, using two forks take each covered banana and place them in the pan, and fit as many as you can in the pan. Let them cook for 1-2 minutes. Flip each mini pancake and cook for an additional minute. Repeat for the rest of the banana slices.  

Serve topped with blueberries and maple syrup. Enjoy!
