Ingredients:
For the cake
- 3 cup Just About Foods Oat Flour
- 1 teaspoon Just About Foods Xanthan Gum
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 3 tablespoons cocoa powder
- 2 cups brown sugar
- 1 cup butter, room temperature
- ½ cup Greek yogurt or plain yogurt
- 4 eggs
- 2 teaspoons vanilla extract
- 1 tablespoon instant coffee
For the frosting
- ¾ cup of creme fraiche (fresh cream)
- 4 oz cream cheese
- ¼ cup + 2 tablespoons icing sugar
- 1 tablespoon instant coffee
- 1 tablespoon granulated sugar
- 1 tablespoon water
- Extra-Cocoa powder
Instructions:
Preheat oven to 350°F and line a 10” cake pan with cooking spray and parchment paper.
In a medium bowl, sift together Oat Flour, Xanthan Gum, baking soda, baking powder, salt and cocoa powder.
In a mixing bowl, beat the butter until soft, add brown sugar and mix until creamy. Add eggs, vanilla extract, and instant coffee and mix until well combined.
Add the flour mixture to the mixing bowl in 3 additions, mixing between additions to avoid any lumps. Finally, add the yogurt and mix until well combined.
Pour the batter into the prepared cake pan and bake for 60-65 minutes or until a toothpick inserted in the middle comes out clean.
Let the cake cool in the pan for 10 minutes, then, invert over a cooling rack to cool completely.
For the Dalgona coffee frosting, whisk the instant coffee, granulated sugar, and water until creamy and fluffy. In a medium bowl, beat the cream cheese until soft and creamy, add the Crème Fraiche, and icing sugar, and combine. Finally, add the Dalgona coffee into the cream cheese mixture. We used half of the Dalgona coffee, but you can adjust it to your taste.
Transfer the cake to a serving dish and add the frosting on top, using a small offset spatula or the back of a spoon. With a sieve, dust the cake with cocoa powder.
You can let it set in the fridge for 30 minutes or serve it right away. Enjoy!
