Ingredients
For the dough
- 120 g – Just About Foods Chickpea Flour
- 1 cup – water
- 1 tsp – garlic powder
- 3 tbsp – olive oil
- A pinch – salt
For the crepes
- 100 g – sliced ham (any of your preference)
- 1 cup – mozzarella cheese (or any of your preference)
- 150 g – sliced mushrooms
- 2 cups – spinach
- salt and pepper
- Extra* – any creamy dip or sauce of your choice
Instructions.
- In a bowl, mix together all the ingredients for the batter (flour,water, olive oil, garlic powder and salt).
- Heat a large and extended saucepan and add in a quarter of the batter, making sure to distribute thin and evenly all over the pan.
- Cook for about 1-2 minutes on each side. Reserve.
- In the same saucepan with a little oil or butter, saute your mushrooms and spinach until cooked. Now, move on to assembling your crepes.
- Fill each with ham, cheese and your mushroom and spinach mixture.
- Dip in your favorite sauce & enjoy !
