No Bake Chocolate Cheesecake

Ingredients.

  • 50g – Just About Foods Honey Powder
  • 200g – cream cheese
  • ¼ tsp – kosher salt
  • 15g – cocoa powder
  • 600ml – heavy whipping cream
  • 180g – semisweet chocolate (melted) 
  • 225g – gluten free graham crackers (crushed)
  • 90g – unsalted butter (melted)
  • 30g – semisweet chocolate (melted for garnishing)

Instructions.

  1. In a large bowl mix the crushed cookies and melted butter until well combined.
  2. Press the mixture into the bottom of 9 inch springform or deep dish and freeze for 10 minutes.
  3. In a large bowl place cream cheese, butter, salt and whip until light and fluffy; add in the melted chocolate and mix slowly until well combined.
  4. In another large bowl, whisk the whipping cream until soft peaks form, add Just About Food’s Honey Powder and cocoa powder, continue to beat until well combined.
  5. Now pour the whipped cream, in 2 or 3 parts, onto the cream cheese mixture and beat gently until a homogenous mixture is formed.
  6. Remove crust from freezer and pour the cheesecake mixture.
  7. Pour the remaining melted chocolate and using a knife make a marble effect swirling all around the surface.
  8. Place in the fridge for at least 4 hours.
  9. Serve and enjoy!
