Not So Blond Blondies 

Servings per recipe:  16 servings 

INGREDIENTS:

  • 1 cup melted butter 
  • ½ cup light brown sugar 
  • ½ cup sugar 
  • 2 large eggs 
  • 1 tsp vanilla extract 
  • 1 ¾ cups Organic All-Purpose flour 
  • 1/4 tsp Just About Foods Xanthan Gum*  
  • 1 tbsp Just About Foods Tapioca Flour* 
  • 1/8 teaspoon salt 
  • 1 1/4 cups white chocolate chips

PREPARATION METHOD:

  1. Preheat oven to 320°F. 
  2. In a medium bowl combine the Organic All-Purpose Flour, Xanthan Gum, Tapioca Flour and salt, whisk to break any lumps.  
  3. In a Large bowl, combine melted butter and both sugars, mix until no butter is seen. Add the eggs, one by one mixing in between additions. Pour in the vanilla extract and mix.  
  4. Add the dry mix to the wet mix and combine until homogeneous. 
  5. Fold in ¾ of the white chocolate chips and transfer the batter into a greased 9×9” or a 9×5” baking tin. Add the rest of the white chocolate chips on top and bake for 70-90 minutes or until set and golden brown in the edges and the center looks slightly uncooked. 
  6. Let it cool completely in the mold and then, unmold and cut into squares.
