 Oaxacan Meatballs

Ingredients.

  • ⅔ cup – Just About Foods Sunflower Seeds Crumbs (+ ¼ extra if needed )
  • ¼ tsp – cumin
  • 750g – ground beef
  • ½ cup – rice (soaked in water overnight)
  • 2 pieces – egg
  • 1 piece – onion (sliced)
  • 2 pieces – chipotle chilis
  • 4 cups – water
  • 1 twig – peppermint (chopped)
  • 1 tbsp – chicken broth powder
  • 3 tbsp – oil
  • 6 large pieces – tomato
  • 2 tbsp – powder tomato broth
  • as needed – salt & pepper

Instructions.

  1. In a large bowl, combine ground beef, cumin, peppermint, chicken broth powders, soaked and drained rice, raw eggs and your Just About Foods Sunflower Seed Crumbs. Mix until evenly combined.
  2. Form the meatballs, equally portioned. Reserve.
  3. In a deep cooking pot, add in the oil and sauté the onions. 
  4. Blend together tomatoes with the chipotle chilis; then add to the pot and boil for a few minutes.
  5. Add in the tomato broth powder and water. Once it boils again, add in your previously formed meatballs and simmer until the meat is fully cooked.
  6. Serve hot. Enjoy !
