Ingredients:
- 3 large white onions
- 1 ½ cups Just About Foods All-Purpose Gluten-Free Flour
- 1 teaspoon baking powder
- 1 teaspoon garlic powder
- ½ teaspoon dried parsley
- ½ teaspoon chili flakes
- ½ teaspoon salt
- 1 cup of beer
- 1 cup Just About Foods Peanut Crumbs
- Oil to fry
- Dipping sauce of your choice
Instructions:
Cut the onions into ¼” thick slices and separate them into rings.
In a wide bowl, whisk Just About Foods All-Purpose Gluten Free Flour, baking powder, garlic powder, dried parsley, chili flakes, and salt. Add the Peanut Crumbs into a separate bowl for the breading.
Coat each ring into the flour mixture shaking the excess. Transfer the covered rings into a wide dish and set aside.
Combine the remaining flour with beer, whisking to avoid any lumps. Coat the onion rings with this batter and immediately transfer them into the peanut crumbs bowl. Coat them and shake the excess crumbs.
Prepare the oil for frying to 365°F. If you don’t have a thermometer, you can check the temperature by dropping some batter into the oil; if it bubbles immediately, is ready.
Deep-fry the onion rings until golden brown. Drain them on a wire rack and let them cool.
Serve with your favorite dipping sauce and enjoy!
