Ingredients.
For the crumble topping:
- 210g – Just About Foods Cassava Flour
- ¾ tsp – Just About Foods Xanthan Gum
- 170g – unsalted butter (melted and cooled)
- 50g – old-fashioned oats
- 70g – sugar
- 100g – brown sugar
- 1 tbsp – cinnamon
- ½ tsp – ground nutmeg
- ¼ tsp – salt
For the peach filling:
- 8 pieces – peach (pitted and cut into large cubes)
- 18g – Just About Foods Cornstarch
- 100g – sugar
- a pinch – salt
- ½ tsp – ground cinnamon
- 1 tsp – vanilla extract
Instructions.
- Preheat the oven to 350°F and line a medium baking dish with parchment paper, reserve.
- For the crumble topping, in a medium sized bowl, place flour, xanthan gum, oats, sugar, cinnamon, nutmeg, salt and brown sugar; mix to remove any lumps, then add the melted butter, mix to combine well. Reserve
- Now, for the peach filling, place in a large bowl the peaches, sugar, cornstarch, salt, cinnamon and vanilla extract; mix to coat the peaches completely.
- Pour the filling into the prepared dish and bake for 10 minutes first.
- Remove from the oven and place on a heat proof surface to scatter the crumble topping evenly on top.
- Return the dish to the oven and bake for 25 minutes or until the topping is golden brown. Allow 5-10 minutes to cool.
- Serve warm and enjoy!
