Peach Crisp

Ingredients. 

For the crumble topping: 

  • 210g – Just About Foods Cassava Flour 
  • ¾ tsp – Just About Foods Xanthan Gum 
  • 170g – unsalted butter (melted and cooled) 
  • 50g – old-fashioned oats 
  • 70g – sugar 
  • 100g – brown sugar 
  • 1 tbsp – cinnamon  
  • ½ tsp – ground nutmeg 
  • ¼ tsp – salt 

For the peach filling: 

  • 8 pieces – peach (pitted and cut into large cubes) 
  • 18g – Just About Foods Cornstarch 
  • 100g – sugar 
  • a pinch – salt 
  • ½ tsp – ground cinnamon 
  • 1 tsp – vanilla extract 

Instructions. 

  1. Preheat the oven to 350°F and line a medium baking dish with parchment paper, reserve. 
  2. For the crumble topping, in a medium sized bowl, place flour, xanthan gum, oats, sugar, cinnamon, nutmeg, salt and brown sugar; mix to remove any lumps, then add the melted butter, mix to combine well. Reserve 
  3. Now, for the peach filling, place in a large bowl the peaches, sugar, cornstarch, salt, cinnamon and vanilla extract; mix to coat the peaches completely. 
  4. Pour the filling into the prepared dish and bake for 10 minutes first. 
  5. Remove from the oven and place on a heat proof surface to scatter the crumble topping evenly on top. 
  6. Return the dish to the oven and bake for 25 minutes or until the topping is golden brown. Allow 5-10 minutes to cool. 
  7. Serve warm and enjoy!
