Ingredients.

  • 225g – Just About Foods Pizza Crust Cauliflower Flour
  • ¼ tsp – Xanthan Gum
  • 150ml – warm water
  • 1 tbsp – instant yeast
  • 1 tbsp – sugar
  • ½ tsp – salt
  • 1 tbsp – olive oil

For the pizza toppings.

  • 70g – tomato sauce
  • 70g – shredded mozzarella or parmesan cheese
  • 70g – pepperoni

Instructions.

  1. Start by activating the yeast in the warm water and add the sugar in as well, mix and let it ferment for 10 minutes.
  2. Now, prepare the dough by mixing flour, xanthan gum, salt, olive oil and the activated yeast, knead until a smooth dough forms. Cover with film and let it rest for 20 minutes more.
  3. When the last 5 minutes remain, preheat the oven to 400°F and grease a muffin tin. Reserve.
  4. Roll out the dough in a generously floured surface and cut strips about 3 cm wide; spread tomato sauce onto each strip, top with cheese all over and place the pepperoni with about a third of the round above the strip of dough, then roll out like a cinnamon roll.
  5. Place in previously greased muffin tin and carefully brush with a little more tomato sauce on top.
  6. Bake for 25 minutes or until golden brown and crispy.
  7. Allow to cool for a couple minutes, then serve along with more sauce.
  8. Enjoy!
