Ingredients.
- 225g – Just About Foods Pizza Crust Cauliflower Flour
- ¼ tsp – Xanthan Gum
- 150ml – warm water
- 1 tbsp – instant yeast
- 1 tbsp – sugar
- ½ tsp – salt
- 1 tbsp – olive oil
For the pizza toppings.
- 70g – tomato sauce
- 70g – shredded mozzarella or parmesan cheese
- 70g – pepperoni
Instructions.
- Start by activating the yeast in the warm water and add the sugar in as well, mix and let it ferment for 10 minutes.
- Now, prepare the dough by mixing flour, xanthan gum, salt, olive oil and the activated yeast, knead until a smooth dough forms. Cover with film and let it rest for 20 minutes more.
- When the last 5 minutes remain, preheat the oven to 400°F and grease a muffin tin. Reserve.
- Roll out the dough in a generously floured surface and cut strips about 3 cm wide; spread tomato sauce onto each strip, top with cheese all over and place the pepperoni with about a third of the round above the strip of dough, then roll out like a cinnamon roll.
- Place in previously greased muffin tin and carefully brush with a little more tomato sauce on top.
- Bake for 25 minutes or until golden brown and crispy.
- Allow to cool for a couple minutes, then serve along with more sauce.
