Ingredients:

 For the bread

  • 3/4 cup warm water
  • 2 ¼ teaspoons of instant dry yeast
  • 3 ¼ cups of Just About Foods Organic All-Purpose Flour
  • 2 tablespoons sugar
  • 2 teaspoons Just About Foods Xanthan Gum*
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 3 eggs
  • 2 tablespoons vegetable oil
  • 1 teaspoon apple cider vinegar

For the filling

  • 1/3 cup butter, room temperature
  • 5 garlic cloves, minced.
  • ¼ cup grated parmesan cheese, plus extra to sprinkle
  • 2 tablespoon parsley finely chopped.
  • 15 tablespoons grated mozzarella cheese.
  • Salt and pepper
  • 1 beaten egg

Instructions:

In a small bowl combine the water and instant dry yeast and let it hydrate for 5 minutes.

In the bowl of the stand mixer, combine the dry ingredients and whisk using the paddle attachment, then, add the eggs, oil, and the hydrated yeast mixture. Mix on medium speed until a smooth dough is formed. Cover the dough with plastic film and let it rise for 40 minutes.

For the filling, combine the room-temperature butter with the minced garlic, parmesan cheese, chopped parsley, and salt and pepper to taste.

Roll your dough over a floured work surface into a rectangle of approximately 10.5×15”, about ¾” in thickness. Spread the butter filling on top and cut it into 3×3.5” rectangles, you will get 15 rectangles.

Put one tablespoon of mozzarella in the center of each rectangle and stack the rectangles on top of each other. Carefully transfer to a 1lb loaf pan, cover it with plastic wrap, and let it rise for 20 minutes.

Preheat your oven to 350°F.

Remove the plastic wrap, brush the top with the beaten egg, and sprinkle some extra parmesan, bake for 30-35 minutes or until golden brown on the edges.

Let the loaf cool a bit before unmolding. Serve warm and enjoy!
