Pumpkin and Carrot Cream

Ingredients. 

  • 2 tsp – Just About Foods Coconut Syrup 
  • 1/2 piece – pumpkin  
  • 2 cups – carrots (cut into 1 inch slices) 
  • 1/2 piece – onion (cut into small cubes) 
  • 5 cloves – garlic (roughly chopped) 
  • 2 tsp – oil (any of your preference) 
  • 2 cups – vegetable broth 
  • 2/3 cups – milk (any of your preference) 
  • a pinch – nutmeg 
  • a pinch – cinnamon 
  • as needed – salt and pepper 

Instructions. 

  1. Preheat the oven to 400°F and bake half of the pumpkin for about 30-40 minutes or until you can easily scoop the inside. 
  2. While the pumpkin is baking, over a large pot at medium heat, add oil and carrots and stir constantly for 5 minutes; finely add the onions and garlic and keep stir frying until translucent and aromatic. 
  3. Add in vegetable broth, milk, Just About Foods Coconut Syrup and spices, and simmer for 10 minutes to allow the flavors to meld. 
  4. Use an immersion blender or carefully transfer to a blender, and process until a silky cream comes together; if you prefer thinner soup, add more broth as wished. 
  5. Add salt and pepper and adjust flavors as needed. Serve hot along with your favorite toppings. Enjoy!
