Spinach and Feta Bread With Mint Sauce

Ingredients: 

For the bread 

  • 2 1/2 cups Just About Foods All-Purpose Gluten-Free Flour Blend 
  • 2 teaspoons baking powder 
  • 1 teaspoon salt 
  • 1/2 teaspoon ground black pepper 
  • 1 cup feta cheese, crumbled (reserve 4 tablespoons) 
  • 9 oz frozen spinach, thawed and squeezed 
  • 1/2 cup vegetable oil 
  • 1/2 cup buttermilk 
  • 2 eggs 

For the mint sauce 

  • 1 1/2 oz of fresh mint leaves 
  • 1 cup boiling water 
  • 4 teaspoons sugar 
  • 4 tablespoons malt or apple cyder vinegar 
  • 1/2 teaspoon salt 

Instructions:  

For the mint sauce, finely chop the mint leaves using a food processor or a knife and place them in a heat-proof bowl. Pour boiling water over the leaves and let them steep for 5 minutes. Drain the water and discard it. 

Rinse the leaves with cold water to stop the cooking process, then drain them again. Transfer the drained leaves to a bowl and add the sugar, salt, and vinegar. Stir the ingredients together and let the sauce sit for at least 20 minutes, or while preparing the bread. 

Preheat the oven to 350°F and line a loaf pans with parchment paper, allowing some to hang over the sides for easy removal. 

In a bowl, combine the All-Purpose Gluten-Free Flour, baking powder, salt, and pepper. In a separate pitcher or bowl, whisk together the buttermilk, vegetable oil, and eggs.
