Ingredients.
- 20g – Just About Foods Peanut Crumbs
- 300g – spinach (roughly chopped)
- 1 small piece – onion
- 2 tbsp – olive oil
- 1 clove – garlic
- 60g – mozzarella cheese (grated)
- 1 piece – egg
For the breading.
- 50g – Jaf All Purpose Flour
- 60g – Jaf Peanut Crumbs
- 1 piece – egg
- as needed – vegetable oil for frying
Instructions.
- Heat a large saucepan and add the two tablespoons of olive oil; finely chop onion and garlic, place in the pan and stir fry for 5-10 minutes. Then add in the spinach and keep stirring for another 5 minutes until they become soft and drained. Transfer to a bowl and cool for 5 more minutes.
- Place the egg, grated cheese and Just About Food’s Penaut crumbs in the bowl and mix until fully combined.
- In a lined baking sheet or a plate lined with parchment paper, place equal dollops of the mixture in 4 inch diameter circles, about ½ inch thick. Freeze for at least 45 minutes.
- Heat up to medium fire a large saucepan with enough oil for frying.
- Place in the separate deep plates the flour, crumbs and egg. Remove the frozen discs from the parchment paper and one by one fully coat them in flour first, egg next and finally to the Peanut Crumbs.
- Place two or three discs at a time in the oil and fry for about 2 minutes each side or until golden brown and crispy.
- Drain excess oil by placing them over a sheet of paper towel.
- Serve immediately along your favorite accompaniment, enjoy !
