Strawberry & Whipped Cream Cake

Ingredients.

  • 220g – Just About Foods Cassava Flour
  • 1 tsp – Just About Foods Xanthan Gum
  • 150g – egg
  • 150g – puréed strawberry 
  • 250g – unsalted butter
  • 250g – sugar
  • 1 tsp – baking powder
  • ½ tsp – baking soda
  • ½ tsp – salt
  • ¼ tsp – ground cinnamon
  • whipped cream – optional for serving
  • chopped fresh strawberries – optional for serving

Instructions.

  1. Preheat your oven to 350°F and line a cake tin with parchment paper.
  2. Cream together butter and sugar until light and fluffy.
  3. Add in the egg and puréed strawberries, mix until well combined.
  4. Place flour, xanthan gum, baking powder, baking soda, salt, and ground cinnamon. Mix with a spatula just until combined.
  5. Pour onto your previously lined cake tin and spread evenly.
  6. Bake for about 30-45 minutes, depending on your oven and desired texture. Insert a toothpick to make sure it is cooked all through.
  7. Remove from the oven and allow to cool in mold for 15 minutes, then transfer to a rack to fully cool.
  8. Cut in half, place a layer of whipped cream and fresh strawberries, add the top layer and decorate the same way.
  9. Serve immediately and enjoy !
