Ingredients.
- 220g – Just About Foods Cassava Flour
- 1 tsp – Just About Foods Xanthan Gum
- 150g – egg
- 150g – puréed strawberry
- 250g – unsalted butter
- 250g – sugar
- 1 tsp – baking powder
- ½ tsp – baking soda
- ½ tsp – salt
- ¼ tsp – ground cinnamon
- whipped cream – optional for serving
- chopped fresh strawberries – optional for serving
Instructions.
- Preheat your oven to 350°F and line a cake tin with parchment paper.
- Cream together butter and sugar until light and fluffy.
- Add in the egg and puréed strawberries, mix until well combined.
- Place flour, xanthan gum, baking powder, baking soda, salt, and ground cinnamon. Mix with a spatula just until combined.
- Pour onto your previously lined cake tin and spread evenly.
- Bake for about 30-45 minutes, depending on your oven and desired texture. Insert a toothpick to make sure it is cooked all through.
- Remove from the oven and allow to cool in mold for 15 minutes, then transfer to a rack to fully cool.
- Cut in half, place a layer of whipped cream and fresh strawberries, add the top layer and decorate the same way.
- Serve immediately and enjoy !
