Ingredients:
For the chicken Cordon Bleu
- 4 skinless, boneless chicken breast halves, pounded
- 2 tablespoons Just About Foods All-Purpose Gluten Free Flour
- 8 slices Swiss cheese
- 8 slices jam
- 1 egg
- 1 cup Just About Foods Sunflower Seeds Crumbs
- Oil
- Salt and pepper
For the chickpea gravy
- 5 tablespoons Just About Foods Chickpea Flour
- 2 tablespoons olive oil
- 2 cups chicken stock
- ¼ cup white wine (optional)
- ½ teaspoon dried parsley
- Salt and pepper
Instructions:
Sprinkle both sides of the chicken breasts with salt and pepper and place two slices of jam and two slices of Swiss cheese on top of each chicken breast. Then, roll them tightly.
Coat the rolls with all-purpose gluten-free flour, beaten egg and sunflower seeds crumbs, making sure they are perfectly covered.
Fry the chicken rolls over medium heat until golden brown. Then, turn the heat to low, cover the pan and cook for 5-7 minutes or until the chicken is fully cooked.
Place the chicken rolls on a cooling rack and sprinkle them with salt.
For the chickpea gravy, heat olive oil in a saucepan over medium heat. Add chickpea flour and whisk until golden brown. Then, add the chicken stock little by little while whisking the mixture. Pour in the wine and let it boil until the gravy thickens. Finally, add dried parsley, salt, and pepper to taste.
Serve the stuffed chicken rolls with warm gravy, garnish with dried parsley and enjoy!
