Ingredients:
- 3 eggs
- 5 tablespoons water
- 1 teaspoon vanilla extract
- ¾ cup Just About Foods Tapioca Flour
- 1/8 teaspoon salt
- ½ teaspoon sugar
- Cooking spray
- Nutella and strawberries for the filling.
Instructions:
In a medium-sized bowl, whisk the eggs, water, vanilla extract, salt and sugar.
Add the Tapioca Flour and stir slowly until well combined.
Put a non-stick pan over medium-low heat. Spray some cooking oil and distribute it with a paper towel. Hold the pan by the handle and pour ⅓ cup of the batter into the pan. Swirl the pan quickly, making sure all the bottom surface is covered by a thin layer of the batter.
When the surface looks dry, carefully flip, and cook for 30 seconds on the other side. Gently remove the crepe from the pan and repeat with the rest of the batter.
Fill the crepes with your favorite ingredients and enjoy!
