Thanksgiving Roasted Garlic Mashed Potatoes

Ingredients.

  • 50g – Just About Foods Peanut Crumbs
  • 1 head – garlic
  • 1 tsp – olive oil
  • 1 kg – potatoes 
  • as needed – salt and pepper
  • 6 tbsp – butter
  • ¾ cup – heavy cream

Instructions.

  1. First, roast the garlic; cut the top, wrap it in foil and drizzle olive oil all over. Roast in an airfryer or oven at 350º for about 45 minutes. Garlic will be very soft and golden, easy to squeeze the garlic cloves out of the skin.
  2. Place potatoes in a large pot and cover with cold water, add 1 tbsp salt and bring to a boil. Simmer until fork tender.
  3. Drain and return potatoes to pot, along with the roasted garlic cloves. 
  4. Gently warm the heavy cream and butter and add to the pot with the potatoes and garlic, along with your Peanut Crumbs, salt and pepper.
  5. Mash until you reach a creamy consistency with some lumps.
  6. Garnish with a little more butter, serve and enjoy !
