Gluten free chocolate chip cookies with Chickpea flour

INGREDIENTS

  • 1/2 cup coconut oil
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups precooked chickpea flour 
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup  semi-sweet chocolate chips
  • 1 pinch of coarse sea salt

 

PREPARATION METHOD 

Preheat oven to 350F degrees. Line a large baking sheet with parchment paper. In a bowl mix the dry ingredients (chickpea flour, baking soda and salt). In a separate bowl, using an electric mixer, mix together the coconut oil and brown sugar until smooth and creamy. Then, add the egg and vanilla extract. Gradually incorporate the dry ingredients until well combined. Sprinkle in chocolate chips and stir with a wooden spoon. Refrigerate the dough in a plastic bag for 20 min. Use a medium sized spoon to scoop dough onto the lined sheet. Barely flatten the tops of the cookies. Bake for 15 minutes or until edges are slightly golden brown. Allow cookies to cool.
