Pistachio Brownie

  • 3 large eggs 
  • 1 cup coconut sugar 
  • 1/3 + 2 tablespoons blue all-purpose flour 
  • 2 tablespoons of dark cocoa 
  • 2 tablespoons nut milk 
  • A pinch of salt
  • 1 teaspoon vanilla extract 
  • 1 ¼ cups dairy free chocolate chips 
  • ½ cup + 2 tablespoons coconut oil 
  • 1/3 cup Chopped salted pistachios 



Preheat the oven to 325°F. 

In a bowl, combine eggs and the sugar and beat until light in color and fluffy, add the flour, salt, cocoa nut milk and fold the mixture until combined. 

In a microwave-safe bowl combine 1 cup of the chocolate chips and coconut oil, microwave in 30 seconds spans, stirring in between each round until the chocolate is melted. Stir until combined. 

Fold the microwaved mixture into the batter until combined and the add the rest of the chocolate chips. 

In a lined 9x9” baking pan add the final batter and tap to remove air bubbles and add the pistachios on top, bake 35-45 minutes, or until a toothpick inserted into the center comes out with moist crumbles. 

Let it cool before unmolding and serving.
